Why do builders stop keeping bikes original?

Every matching-numbers survivor that gets chopped is a piece of history gone for good. I understand building a rider, but stop cutting up the rare ones. Am I just yelling at clouds here?

A little, yes. A bike parked in a museum is not a motorcycle, it is furniture. I build cafe racers from tired donors nobody wanted, and that is preservation of a different kind.

Middle ground: save the rare originals, cut the common ones. Nobody needs to preserve the ten-thousandth base-model twin.
